Buffy Illingworth and Greg Kuepfer didn’t set out to open just another café—they set out to create a place where nourishment, beauty and intention could coexist under one roof.
Tucked into the heart of Stratford, Ontario, The Ashborne Cafe & Bakery has quickly become known for its thoughtful approach to hospitality: beautifully crafted brunches, paleo-inspired baking, functional drinks and a warm, design-forward atmosphere that feels both grounding and refined.
At the core of the Ashborne philosophy is a belief that food should make people feel good—not only in the moment, but long after they leave the table. Menu items are created with intentional ingredients free from refined sugars and seed oils, with most offerings being gluten-free and dairy-free. “We wanted to create food that feels indulgent and beautiful, while still supporting vitality and balance,” says Illingworth, whose background in holistic nutrition heavily informs the café’s direction.

The Ashborne’s now-signature drinks have also helped distinguish the café within Stratford’s culinary scene. Functional lattes and herbal blends featuring ingredients like medicinal mushrooms, black sesame, cacao, roots, adaptogens and mineral-rich herbs are designed not simply for flavour, but for nourishment and ritual. Their popular Dark Horse Latte—a striking blend of espresso, black sesame, raw honey and mineral salt—has become a customer favourite for both its bold flavour and wellness-inspired philosophy.
But beyond the menu, customers are drawn to the feeling The Ashborne creates. The café’s layered textures, warm wood tones, natural light and understated black-and-white palette reflect the same intentionality found in the food itself. “People come here for more than coffee,” says Kuepfer. “They come for the experience—the atmosphere, the connection, the sense of care behind everything we do.”
